Ingredients

  • 3 lbs chicken thighs (bone-in, skin-on)

  • ½ cup white vinegar
  • ½ cup low-sodium soy sauce
  • 1 cup water

Instructions

  2. In a large pot or deep pan, combine the vinegar, soy sauce, and water.
  3. Add the seasoned chicken to the liquid.
  4. Bring to a boil, then reduce heat, cover, and simmer for 30 minutes.
  5. Remove the lid and continue to simmer for another 15 minutes, allowing the sauce to reduce slightly and deepen in flavor.
  6. Optional: Broil the chicken for 3–4 minutes to crisp up the skin before serving.
