Mexican Corn Ribs (Elote Style) with Secret Sauce

By charring the corn and finishing it with creamy toppings and Secret Sauce Spice Blend, you get all the bold, street-style flavor with an extra smoky kick that keeps people coming back for more.

Ingredients

  • 4 ears fresh corn, husked
  • ¼ cup mayonnaise
  • ¼ cup Mexican crema or sour cream
  • ½ cup cotija cheese, crumbled
  • 3 Tbsp Secret Sauce Spice Blend
  • 2 limes, cut into wedges
  • Wooden sticks or corn holders

Instructions

  1. Grill or char the corn over high heat, turning occasionally, until slightly blackened all over (about 8–10 minutes).
  2. Insert wooden sticks or corn holders into each cob.
  3. In a shallow dish, mix the mayonnaise and crema until smooth.
  4. While the corn is still hot, roll each cob in the mayo mixture to coat evenly.

  6. Top with crumbled cotija cheese.
  7. Serve immediately with lime wedges on the side.
