Spicy BBQ Shrimp with Mango Avocado Rice Salad
Ingredients:
- 1-pound large shrimp, peeled and deveined (tails on or off, your preference)
- 3 tablespoons olive oil
- 3 tablespoons Spicy Style BBQ Rubs
- 1 large red bell pepper (large diced)
- 1 large yellow pepper(large diced)
- Fresh lime juice
- Metal or bamboo skewers soaked in water for at least 30 minutes (optional, but helps prevent burning)
Instructions:
- Pat the shrimp dry with paper towels. In a large bowl, mix Spicy Style BBQ Rub with olive oil add Shrimp coat evenly. Let marinate for at least 7 to 10 minutes.
- Thread the shrimp onto the skewers, with a pepper dice leaving a little space between each one for even cooking.
- Arrange the skewers in a single layer in the air fryer basket, making sure they are not touching. You may need to cook them in batches depending on the size of your air fryer.
- Air fry at 400 F for 8 -10 minutes, or until the shrimp are pink and opaque throughout.
- Flip the skewers halfway through cooking for even browning (optional, but recommended for thicker shrimp).
- Once cooked, remove the skewers from the air fryer and let them cool slightly before serving.
Serve over a bed of the Mango Avocado Rice Salad with a fresh squeeze of lime.
Tips:
- For a sweeter and smokier flavor, add 1 tablespoon of brown sugar to the marinade.
- Serve with your favorite dipping sauce, such as sriracha mayo, lime wedges, or a cool and creamy cilantro lime sauce.
- You can also add other vegetables to the skewers, such as bell peppers, cherry tomatoes, or pineapple chunks. Just make sure to pre-cook any vegetables that take longer to cook than shrimp, such as bell peppers.
