Carne Asada and Cilantro Rice

Carne Asada

Ingredients:

  • 2 pounds flank steak or skirt steak trimmed 
  • 4 T Carne Asada BBQ Rub 
  • 1 Large lime, juiced 
  • 2 T Olive oil 

Instructions: 

  1. In a bowl, combine lime juice, olive oil and Carne Asada BBQ Rub. Add the trimmed steak and toss to coat. Poke holes in the meat for better flavor absorption of marinate. 
  2. Marinate the steak for at least 15 to 20 minutes, or up to 2 hours. 
  3. Preheat a Cast Iron Skillet or grill medium-high heat. 
  4. Cook the steak for 3-4 minutes per side, or until cooked to your desired doneness. 
  5. Serve the carne asada with tortillas, salsa, guacamole, and your favorite toppings. 

 

Cilantro Lime Rice 

Ingredients: 

  • 2 cups cooked white rice 
  • ½ C Roasted Frozen Corn 
  • ½ C Roasted Peppers-chopped 
  • 1 small white onion diced 
  • 1/4 teaspoon salt 
  • 1/4 cup chopped cilantro 

Instructions: 

  1. In a large sauté pan. Add olive, heat to medium. add onion sauté until translucent.  
  2. Add mixed peppers and corn.  
  3. Add the rice and stir in the cilantro. 
  4. Serve hot or at room temperature. 

Cilantro rice can be served with a variety of dishes, such as chicken, fish, shrimp, or tofu. It can also be served as a side dish for tacos or burritos. 

 

Tips: 

  • If you don't have a cast iron, you can also grill or cook the carne asada in a hot skillet over medium-high heat. 
  • Be sure to let the steak rest for a few minutes before slicing it, so the juices can redistribute 
  • Use a good quality steak. Flank steak and skirt steak are the best cuts for carne asada, but you can also use other cuts of beef, such as sirloin or top round. 
  • Don't overcook the steak. Carne asada is best served medium-rare or medium. 
  • Serve carne asada with your favorite toppings. Tortillas, salsa, guacamole, and rice are all great options.
