Ingredients:

  • 8 eggs
  • 1 C half and half (Almond or Skim Milk)
  • ½ C diced onions
  • 1C diced or chopped Pepper
  • 3 C chopped spinach or baby kale
  • 3 T Spiced Up House Blend
  • ½ C Shredded cheddar
  • ¼ C Parmesan Cheese

 Instructions:

First, preheat your oven to Broil. Heat 3 tablespoons of olive oil in a 10" oven-safe skillet over medium-high heat. Add ½ cup diced onions, chopped peppers, and kale. Cook, stirring occasionally, until softened, about 5 minutes. Meanwhile, whisk 8 large eggs in a medium bowl with 1 cup of half and half, 3T Spiced Up - House Blend.

Pour the egg mixture and any additions into your skillet, stir, and cook just until edges start to pull away from the pan. This will take 5 to 7 minutes. Transfer skillet to oven and broil until set, 6 to 8 minutes. Remove from oven top with cheeses and then return to oven melt cheeses and enjoy!!
