Grilled Open-Faced Mediterranean Chicken Sandwich

🛒 Ingredients

For the Chicken Marinade:

  • 2 boneless, skinless chicken breasts or thighs

  • 2 tablespoons olive oil

  • Juice of 1 lemon

For the Sandwich:

  • 1 fresh baguette, halved lengthwise and lightly toasted

  • 2 cups Mediterranean salad mix (arugula, spinach, romaine)

  • ¼ cup crumbled feta cheese

  • 2 tablespoons balsamic vinaigrette (store-bought or homemade)

  • Extra olive oil for brushing the bread

 


 

👨🍳 Instructions

  1. Marinate the Chicken
    In a bowl or zip-top bag, combine olive oil, lemon juice, and Tuscan Experience seasoning. Add chicken breasts, coat evenly, and refrigerate for at least 20 minutes, or up to 2 hours for deeper flavor.

  2. Grill the Chicken
    Preheat a grill or grill pan to medium-high heat. Grill chicken for 5–7 minutes per side, or until internal temperature reaches 165°F. Let rest for 5 minutes, then slice thinly.

  3. Prepare the Baguette
    Lightly brush the cut side of the baguette with olive oil. Toast on the grill or under a broiler until golden brown.

  4. Assemble the Sandwich
    On each toasted baguette half, layer:

    • A handful of Mediterranean greens

    • Sliced grilled chicken

    • A drizzle of balsamic vinaigrette

    • Crumbled feta cheese

  5. Serve Immediately
    Garnish with extra herbs or lemon zest if desired. Enjoy open-faced or cut in half for easier serving.
